4 John Soules Foods Italian Style Chicken Breast Fillets, thawed
Your favorite Risotto, rice may be substituted
12 ea. Baby Carrots
12 ea. Baby Zucchini
2 T Olive oil
1 T Butter
Directions:
Cook your favorite risotto or rice according to package directions.
Preheat an oven to 375°F. On a baking sheet, cover the John Soules Foods Italian Style Chicken Breast Fillets and heat for 20 to 25 minutes or until 165°F.
Bring a medium pot of water to boil. Add 2 Tablespoons of salt and cook the carrots for 4 to 5 minutes, or until tender. Cook the Zucchini in the same pot for 3 to 4 minutes, or until tender. Transfer drained vegetables to a heated skillet with the butter and olive oil, sauté for 2 minutes and season with salt and pepper to taste.
Place the risotto (or rice), vegetables and chicken on a plate. Serve.
