Ingredients

● 2 tablespoons olive oil
● 1 small red onion, chopped, or 1/2 cup packaged chopped red onions
● 1 1/2 cups grape tomatoes, halved and seeded
● 8 ounces John Soules Foods Blackened Chicken Strips
● 3 cups chopped fresh spinach, or chopped frozen spinach, thawed and drained
● 8 large eggs
● 1/4 cup whole milk
● 1/2 teaspoon kosher salt
● 1/4 teaspoon freshly ground black pepper
● 1 cup shredded Swiss cheese
● Fresh parsley, for garnish

Instructions

Preparation:

  1. Preheat oven to 400°F. Heat olive oil in a large oven-safe skillet over medium-high heat. Add onion and tomatoes and cook until tender, about 5 minutes. Add chicken and cook until heated through, about 3 minutes. Stir in spinach and cook until wilted, about 3 minutes.
  2. Whisk together eggs, milk, salt and pepper in a large bowl until smooth. Stir in cheese, and pour over chicken mixture. Transfer skillet to oven and cook until eggs are set, about 15 minutes. Remove from oven and cool for about 10 minutes. Garnish with parsley, and serve.

Tip: Packaged chopped vegetables can usually be found in the produce aisle of your local grocer.
