Ingredients

Ingredients:

  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/4 cup low-sodium chicken broth
  • 2 tablespoons white wine
  • 1 lemon, juiced
  • 8 ounces John Soules Foods Blackened Chicken, refrigerated
  • 1 tablespoon capers, drained
  • 1 tablespoon unsalted butter
  • Chopped fresh parsley, for garnish

Instructions

Preparation:

  1. Heat oil in large skillet over medium-high heat. Add garlic and cook until fragrant, about 1 minute.
  2. Pour in chicken broth, wine and lemon juice. Bring mixture to simmer. Cover and reduce heat to low and simmer until slightly reduced, about 2 to 3 minutes.
  3. Add chicken, capers and butter to skillet. Cook, spooning sauce over chicken, for an additional 3 to 4 minutes.
  4. Garnish with parsley and serve.

Tip: Serve over rice, pasta or crusty bread!
