- Whisk together olive oil, fajita seasoning, salt and pepper in a large bowl until combined. Add peppers and onion and toss to coat.
- Skewer chicken, pepper and onion onto skewers, alternating ingredients evenly.
- Heat large grill or grill pan to medium-high heat and brush grates with oil. Place skewers on grill and cook each side for about 2 minutes or until vegetables are fully cooked. Top with cilantro. Serve with lime wedges and over rice.
Tip: Packaged chopped red onions and bell peppers can usually be found in the produce aisle of your local grocer.
