  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 large green bell peppers, cut into 1-inch pieces, or 2 cups packaged chopped bell peppers
  • 1 large red onion, cut into 1-inch pieces, or 1 cup packaged chopped red onions
  • 12 ounces John Soules Foods Blackened Chicken, refrigerated
  • Fresh cilantro, for garnish
  • 1 lime, cut into wedges, for serving
  • 4 cups cooked white rice, for serving

  1. Whisk together olive oil, fajita seasoning, salt and pepper in a large bowl until combined. Add peppers and onion and toss to coat.
  2. Skewer chicken, pepper and onion onto skewers, alternating ingredients evenly.
  3. Heat large grill or grill pan to medium-high heat and brush grates with oil. Place skewers on grill and cook each side for about 2 minutes or until vegetables are fully cooked. Top with cilantro. Serve with lime wedges and over rice.

Tip: Packaged chopped red onions and bell peppers can usually be found in the produce aisle of your local grocer.
Tip: Serve with avocado as a healthy side!
