  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 6 cups baby spinach
  • 1 cup fresh strawberries, sliced
  • 1/4 cup chopped walnuts

  1. Preheat oven to 375°F. Place chicken in an even layer on rimmed baking sheet. Bake for 4 to 6 minutes, or until heated through.
  2. Whisk together vinegar, oil, honey, mustard, salt and pepper in small bowl.
  3. Combine spinach and strawberries in large serving bowl. Drizzle dressing and toss gently to coat.
  4. Top with chicken strips. Garnish with walnuts and serve.
