Heat oil in large skillet over medium heat. Add Soules Kitchen Rotisserie Chicken and cook until lightly browned and heated through, about 5-7 minutes. Remove from heat.
Combine cream cheese, mozzarella, spinach, artichoke hearts, salt and pepper in small bowl until all ingredients are evenly distributed.
Spread cream cheese mixture evenly over 2 slices of bread. Top each with chicken and remaining slices of bread.
Melt butter in same skillet over medium heat. Place sandwiches in skillet and cook until cheese is melted and toast is golden-brown, about 2-3 minutes per side. Slice and serve.
