Let’s Make It!

  1. In a mixing bowl, combine the chicken and both cheeses, mix well.
  2. Lay 8 tortillas out and spread the chicken and cheese mixture evenly between all 8 tortillas.
  3. Place one of the each remaining tortillas on top to form the quesadilla.
  4. Preheat a non-stick skillet over medium high heat, spray with pan release.
  5. Place the assembled quesadilla in the pan and allow to cook for 2 minutes on each side, or until golden brown, and the cheese is melted throughout.
  6. Repeat for the remaining 7 quesadillas.
  7. Allow to rest for 2 minutes before serving.
