- Preheat oven to 375°F. Lightly coat a baking sheet with cooking spray. Place chicken in an even layer on prepared baking sheet. Bake for 10 minutes. Take out of oven and flip chicken over. Bake for an additional 10 to 12 minutes.
- Meanwhile, combine kale, cabbage, mayonnaise, vinegar and salt in large bowl.
- Spread special sauce over bottom halves and top halves of buns. Top each bottom half with chicken, cheese, kale mixture, pickle chips, tomatoes and bun lid.
Tip: Substitute purple cabbage mixture with packaged coleslaw mix to make an even easier weekday recipe!
Tip: Create your own special sauce! Whisk 1/4 cup of ketchup, 1 tablespoon of mustard and 2 teaspoons of sweet pickle relish together in a small bowl until combined.
