Ingredients

  • 2 tablespoons olive oil
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 16 ounces John Soules Foods Flame Grilled Chicken, refrigerated or thawed
  • 2 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon dried Italian seasoning
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 12 ounces penne pasta, cooked
  • Chopped fresh basil leaves, for garnish

Instructions

Preparation:

  1. Heat oil in large skillet over medium heat. Add tomatoes and cook until tender about 3 minutes. Add chicken and cook until heated through, about 3 to 4 minutes. Add garlic and cook until fragrant, about 1 minute.
  2. Pour in broth and heavy cream and bring mixture to simmer. Cook until thickened, about 5 to 7 minutes. Stir in Parmesan, Italian seasoning, salt and pepper. Add pasta to skillet and toss to coat.
  3. Garnish with basil and serve.

Tip: Serve with side salad or garlic bread!
